Preheat the oven to 450F.
Spread the potatoes on a baking tray and sprinkle with olive oil, salt, and pepper. Gently toss the potatoes.
Place the potatoes in one layer, cut-side up.
Roast for 20-30 minutes or until tender.

Cover the pot to cook par-cooked potatoes. Let the potatoes soak in the hot water for ten minutes before draining.
To boil potatoes fully, reduce heat to simmer and continue cooking until potatoes are tender. It can take between 10 and 30 minutes depending upon the size of the potato.
